Rep. Jerry Anderson holds a cookie frosted with a capital "E" near the end of the 2013 Utah legislative session. The E symbolizes the new official name of the college once known as the College of Eastern Utah. It is now, by state law, dubbed Utah State University Eastern, abbreviated as USU Eastern. State Sen. David Hinkins introduced the bill, SB 258, that amends sections of the state code by striking out mentions of the old name and inserting the new one. Anderson sponsored the legislation in the House of Representatives. The bill sailed through committee and both chambers of the legislature unanimously. Some background on the cookie: Anderson had apologized to his colleagues for not having his own treats, after seeing that Dixie College - now Dixie University - had distributed cookies with a big "D" on them. When he came back to the chamber after a break, there was a plate of cookies with the "E" placed anonymously on his desk.
